Salt and Pepper Shrimp
Hi guys! Today, I’m super excited because it’s finally salt and pepper shrimp time~! So many of you requested after I shared my salt and pepper chicken wings so here it is!
I personally LOVE shrimp so much, so keep expecting more variety shrimp recipe from me! 🙂 Are you ready? Let’s get started!
First thing is first, heat frying oil to 375°F.
Place garlic pieces on a small strainer and fry them in the preheated oil for 15 to 20 seconds or until golden brown. Set aside on a paper towel lined plate.
We are going to do the same for the chili. Make sure to shake off the excess chili seeds before you fry them.
Place chili slices on the strainer and fry them for 5 seconds. Set aside with garlic.Because when you frying chili, the seeds might pop!
Bring frying oil temperature back to 375°F.
Season shrimp with salt and pepper, toss evenly.
Now add potato starch and coat the shrimp evenly with the starch. Shake off the excess.
I like to use potato starch because I think it’s more crispier than cornstarch. But if you have cornstarch in your hand already, feel free to use it!
Carefully drop the shrimp away from you in the frying oil.
Do 2 to 3 batches to not to crowd the pot. If you crowd the pot too much, the oil temperature will drop to fast and too much. The shrimp won’t turn out as crispy as it should be. Frying shrimp 3 to 4 minutes if you are using U16 or adjust cooking time depending on the size of the shrimp you are using.
When the shrimp is done cooking, remove from oil and place on a baking pan lined with cooling rack. Repeat with remaining shrimp.
Combine remaining salt and pepper in a small mixing bowl and place fried shrimp in a serving bowl. Sprinkle salt and pepper mixture right on top and toss it until it’s all evenly coated.
Sprinkle fried garlic and chili. Maybe sprinkle some micro green cilantro if you like and serve with lime wedges.
Sprinkle extra salt and pepper to your taste and serve immediately. Enjoy!

Not quite yet, but I bet it would taste just as good if not better! But make sure to spray some oil onto the shrimp before doing so.
