Is potato quiche tasty? YES!

One of my all time favorite meals is a loaded baked potato. In my mind, the potato is really nothing more than a vessel to get all the other delicious goodness into my mouth. My favorite toppings include cheddar cheese, bacon, green onions and broccoli.

It may sound a bit odd but I love broccoli on my loaded baked potato and I feel a tad less guilty about my dollop or two of sour cream if there is a vegetable on my plate with it! So, when I was sent a delicious package of Cabot cheese and asked to create something for their #QuicheFeast campaign I knew that a loaded baked potato quiche recipe would be a delicious creation. How do you make homemade quiche?

If you have never learned how to make quiche, let me just say that it is incredibly easy. You need a pie crust, eggs, half and half and whatever types of goodies you want in your filling. My mom used to make a ham and cheese quiche recipe on a regular basis.

This potato quiche recipe is quick to assemble, although they do need to cook for an hour. The good thing about homemade quiche is that you can make it up ahead of time and it reheats really well. If you take some time to make one on the weekend, a quiche is the perfect easy dinner recipe...just heat and eat!

Make quiche ahead of time!

This quiche recipe is not only delicious for dinner but would also make a wonderful breakfast, brunch or lunch recipe. The combination of eggs, cheese, broccoli, potatoes and bacon make it perfect for just about any time of day.

After an afternoon of shopping with the teens and carving pumpkins, I was glad I had made this quiche recipe in the morning and didn't have to worry about cooking dinner. For the tastiest results, don't skimp on the ingredients. Fresh broccoli, homemade pie crust and a nice sharp Cabot cheddar made this quiche recipe absolutely perfect.

Making quiche crust from scratch

I don't make homemade pie crust very often but I had no desire to venture out to the store to buy one. Pie crust is really very easy to make. Just flour, salt, water, and butter. Add in a little elbow grease for the rolling pin and you have a homemade pie crust for your next quiche recipe.

How do you make a quiche from scratch?

If you choose to try making your own quiche recipe, remember that the fillings can be swapped out for your favorite foods. Use ham instead of bacon or spinach in place of broccoli.

You really just need to almost fill up the pie crust with your 'goodies' and then pour the egg/half and half combination over the top. The possibilities are endless, although I must admit I am a huge fan of anything that has bacon and cheddar cheese in it!

This loaded baked potato quiche recipe is made with potatoes, cheddar cheese, bacon, green onions. A filling quiche dinner idea that the whole family will love.

Ingredients

  • 1 pie crust for 9 inch pie dish
  • ½ to ¾ cup crumbled cooked bacon (about 6 to 8 slices)
  • 1 ½ cups fresh broccoli florets, lightly steamed but still firm
  • 10 ounces Cabot cheddar cheese, shredded
  • 1 ½ cups shredded hashbrown potatoes (I found them in the refrigerator section near the cheese and eggs)
  • 3 green onions (tops only) chopped. Save a few aside for topping the quiche after baking
  • 5 eggs
  • ¾ cup half and half
  • 1 teaspoon ground black pepper
  • sour cream for topping if desired

Instructions

  1. Into the pie crust, layer the shredded potatoes, the bacon, broccoli, cheddar cheese and green onions
  2. In a large bowl, beat the eggs with the half and half and pepper
  3. Pour the egg mixture over the filling in the crust
  4. Bake for 1 hour at 350 degrees or until a knife inserted in center comes out clean
  5. Let cool 15 minutes
  6. Cut and serve with a dollop of sour cream and additional green onions if desired
