EASY Ground Beef Curry Recipe!

This easy & quick curry recipe will make you a weeknight dinner queen!
Everyone will love this curry for the thick, saucy curry that is packed with flavors!

I loved eating curry with rice (any rice through- short, medium, long, jasmine, basmati, wild & more), but this ground beef curry will be excellent tossed in noodles! I will love to throw in spaghetti as I would do with ragu sauce!

Also, I love putting egg on curry (or just on everything, literally. lol), so I decided to put hot spring egg- onsen tamago. The egg is cooked in low-temperature water (hot spring water temperature, typically 70°C/168°F).

I explained the details of how to do the hot spring egg on my scallion noodle recipe, so check out the link down below!

First, we need to chop all the veggies super fine.

For this recipe, you will need 5 to 7 cloves garlic, 2 oz ginger (you can use ginger powder, but I much prefer fresh ginger roots for all of my recipes), 1 medium size onion (yellow, white, red, or sweet. Any onion will do) and 1 medium-size carrot. When I chop carrot this fine, I like to use my julienne cuter.

Heat a wok or a thick bottom pot over medium heat, add 2 tbsp cooking oil. Add 12 oz of ground beef and breakdown into small pieces. This is an essential step because you want the beef to be the same size as the vegetables.

I used super-lean ground beef, so I had to add some cooking oil.
Of course, you can use other ground meat of your choice for this recipe. Ground pork, chicken, turkey, lamb or even plant-based meat / crumbled tofu will do the job!

Cook 3 to 4 minutes or until fully cooked.

Add chopped garlic, ginger, carrot and onion. Stir fry with beef until you can smell the aroma, about 3 to 4 minutes.

Pour 1 1/2 cup water and chicken stock, bring it to boil.

When it’s boiling, add 4 oz curry sauce block, 3 tbsp ketchup, and 1 tbsp Worcestershire sauce. Stir to combine all sauces with liquid. Bring it to a light simmer and keep simmering for 3 to 5 minutes.

I like to use Vermont curry, but you can use any curry sauce mixture. You can’t use curry powder, though, because this curry sauce mixture has more flavors and thickens up the sauce. So please find either Korean or Japanese brand curry sauce powder/block.

This recipe is one of my favourites for any time. It is very easy to make and yet healthy. For years, I have been making this meal using the recipe provided by another famous Asian chef, Namiko.

I like your recipe and the next I make beef curry, I will be using this recipe recipe.

Thank you for all the lovely recipe you publish.

We don’t seem to have a “curry block”, will using any curry do but 4 oz?

This was one of the most satisfying home cooked meals I had in awhile. I’ve been eating Japanese curry all my life, and never thought to use ground beef. The addition of the ketchup and Worcestershire sauce makes it familiar, but unique. This recipe is a keeper. Thank you😊

This is BOMB-A-LICIOUS. I used the Vermont Mild Curry block. The only change I made was that I reduced the liquid to 1 cup in order to make it a little thicker. Only downside is that I did not have any eggs to put on top. Probably would have made it out of this world delicious. Thank you for all you do for us. My wife and I enjoy trying out your recipes. Haven’t had one disappoint us yet.

I’ve made this recipe twice now and both times, it’s AMAZING! The first time I had venison and it gave it a unique taste and this last time was beef. Can’t express enough how delicious it is.

How spicy is it if you follow the recipe? (Scale of 1-5, 5 being the hottest) I saw you used HOT level Vermont Curry. I do like my curry to have a bit of a kick to it, so wondering if ill need to add extra spiciness to it or if this one meets the spice demand.

I’ve made this four or five times now and it’s so good! I also tried putting the ketchup and worstershire sauce in with a batch of regular curry and liked it a lot, too.

This was SO good, thank you for this recipe! I just put all the vegetables in the food processor since I’m lazy. Also, didn’t have chicken stock on hand so I used all water with 1 tsp Knorr chicken bouillon powder. This is a new family favorite, Four Stars!!!!

FAQs

Why is my curry so watery? ›

It depends on the type of curry you are making. Curry becomes runny if it has more water content, so cook it for few more minutes to let the water evaporate and curry turns thick(this also turns flavors stronger). Also make sure not to overcook the curry. If it is more runny usually I add 1 tablespoon of besan flour.

Do you thicken curry with lid on or off? ›

To thicken a soup, stew, or sauce, leaving the lid uncovered is ideal. "It must be off, or semi-covered, if you are slowing down the reduction process," says Stephen Chavez, chef-instructor at the Institute of Culinary Education.

Can you add milk to a curry? ›

Coconut milk is a vegan option for all curries. You can also try adding a splash of milk, if that's all you have to hand. Milk contains a protein called casein which actually breaks down capsaicin and makes it less spicy – both full-fat and skimmed do the trick nicely.

What is the best thickener for curry? ›

Use cornstarch or arrowroot starch to thicken your curry. Prepare a slurry with starch and cold water/ curry. If you add the starch directly to your curry, it can clump. Add this at the very end of the cooking process.

How do you make curry taste stronger? ›

The easiest way to fix a bland and tasteless curry is by adding spices like red chili powder, cumin, coriander, garam masala, curry leaves and turmeric. Just make a quick tempering and pour over the curry to give it a nice punch of spices and herbs.

How long should curry simmer for? ›

Bring to the boil, lower to a simmer and cook on a gentle heat uncovered for 25-30 mins or until rich and slightly reduced. Stir though the yogurt, coriander and ground almonds, season and serve with warm naan or fluffy basmati rice.

Should I add more water to curry? ›

Adding a little water can restore the balance. Yes, it “dilutes the flavour” but that may be desirable. Secondly, keeping the water content of your curry up to a consistent level (not too much, not too little) throughout the cooking process does ensure gentle cooking.

How long does it take for curry to thicken? ›

Let the curry simmer until it reduces.

Stir the curry as it reduces to test the thickness. Let the curry reduce until it's as thick as you want. Time varies greatly depending on the type of curry, so keep an eye on your curry as it thickens. It may reduce in a few minutes or it may need 10 to 20 minutes to thicken.

Should curry be cooked covered or uncovered? ›

Pretty much every curry my mom makes, whether pressure-cooked or not, gets covered for at least some portion of the cooking time. All the recipe videos that I see recommend cooking your curry with a lid on after adding water to it.

Is it better to simmer curry longer? ›

Simmering a curry allows time for the flavours to infuse; a long, slow simmering time generally produces the best curry. Flavours will continue to infuse even when the curry is taken off the heat, so do allow time for the curry to “rest” and cool down before serving.

Does coconut milk thicken curry? ›

It depends on the type of curry. In Kerala Cuisine: You add Coconut milk and it tends to thicken the gravy a bit. In Rajasthani Cuisine: You add cooked lentils to thicken. In Mughal Cuisine; Cashew or Badam paste is added to thicken.

What kind of milk is used in curry? ›

Regular Milk: Regular milk, especially in the form of cream or yogurt, is often used in curries from regions like North India. It can add a creamy texture and mild flavor to the dish. Creamy curries like butter chicken or paneer tikka masala often use milk or cream to achieve their characteristic richness.

When to put milk in curry? ›

On Indian-style curries and chillies, a spoonful of yoghurt or soured cream works wonderfully, but if you've gone crazy with the heat, you can also add milk to the curry or chilli base. Once you've added the base, gently simmer it, but don't boil it, or it will split.

Is coconut milk always in curry? ›

We often have customers who buy our curry pastes ask us, “Do I have to use coconut milk?” The answer is “absolutely not“!

How is Indian curry so thick? ›

You can use foods like yogurt to get the curry to thicken. You can also add flour or corn starch. Simmering the curry for a few extra minutes can also get it reach the right consistency.

Why didn't my curry thicken? ›

Curry will not thicken if there is not enough heat after adding a roux to the pot. Factors which impede thickening include using too little roux, adding too much water, and using vegetables with a high water content.

How do you thicken curry with plain flour? ›

To use flour as a thickening agent:
  1. Use two tablespoons flour mixed with ¼ cup cold water for each cup of medium-thick sauce.
  2. Thoroughly mix in the water to prevent lumps.
  3. After stirring the combined flour and water into the sauce, cook and stir over medium heat until thickened and bubbly.

How to thicken coconut milk curry? ›

Normally, any kind of flour is added as a thickening agent. I would suggest adding either cashew nuts or almonds for thickening curry. Because these nuts infuse a nice flavour and texture. To quicken the process soak the nuts in hot water, drain and grind to fine paste.
