Over the last few months I’ve been experimenting with different flapjack flavours from rhubarb flapjacks to chocolate banana flapjacks and one surprisingly lovely flavour combination is cherry coconut.

These cherry coconut flapjacks are so easy to make – as are all flapjacks. Taking just over half an hour, and using just store cupboard ingredients, flapjack recipes are so painless to make and great for any occasion. They’re a fantastic alternative to cakes if you have a school bake sale, friends coming over or want to take something with you when you visit family. Flapjacks are perfect.

Can you make vegan flapjacks?

You can easily make flapjacks vegan by using a vegan butter alternative like coconut oil or a plant butter and although they’re not very healthy sweet treats they’re definitely worth every single mouthful! Flapjacks are a wonderful little indulgence and the addition of glacé cherries and dessicated coconut sure do make for a great flavour combination.

Cherry flapjacks

You can vary this recipe if you like to make just cherry flapjacks or coconut flapjacks simply by missing out the other ingredient. Having just glacé cherries and no coconut would make delicious cherry flapjacks. Likewise, if you leave the cherries out and just use the coconut, you would have really lovely coocnu*t flapjacks.

Although we tend to eat these flapjacks straight away, they never last long in our house, they do last well in an airtight container for up to a week.

We love cherry flapjacks at home. They’re something the children love to help make as well as eat and that we enjoy as a sweet treat at pretty much any time of the day. They’re also great for dessert, afternoon tea or even breakfast!

What equipment do you need for this delicious flapjack recipe?

You can make this coconut cherry flapjack recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

Ingredients

  • 150 g margarine or butter
  • 150 g soft brown sugar
  • 90 ml golden syrup
  • 300 g porridge oats
  • 200 g glace cherries
  • 40g desiccated coconut

Instructions

  • Preheat the oven to 160C/325F/Gas 3 and grease a suitable baking tin.
  • Put the margarine in a saucepan and melt in the pan over a low heat. Add the sugar and syrup, stirring until melted together.
  • Add the rolled oats, coconut and cherries and stir until combined.
  • Spread mixture onto the baking tray and bake for 25 minutes until golden brown.
  • Slice whilst still warm and leave to cool in the baking tray.
